Air drying is a food preservation method in which the water in ingredients is removed through evaporation by bringing materials being dried into direct contact with cold or hot air. Drum Drying
During Henry Broch's drum drying process, pureed raw materials are dried at a low temperature over high capacity drums. This produces sheets of dried product. The product is then milled to a flake or powder form. Drum drying is favorable because it is highly cost-effective and maintains much of the product’s original flavor, color and nutritional value.
